CHOCOLATE COVERED STRAWBERRIES

I have been having some fun lately with ways to keep cravings in check and still enjoy some fun foods! I couldn’t help but think fruit and chocolate is kinda the best way to describe BALANCE … am I right orrr?!

Here are some dairy-free chocolate covered strawberries - a cannabis and non-cannabis version! These took me a total of an hour (from prep to having them plated!) and kept well for 2-3 days!

GROCERY LIST

  • Fruit: I used Strawberries, Bananas, Blackberries, Raspberries and Pineapple

  • Chocolate of choice : I have linked my favourite cannabis infused chocolate & I got the Lindt chocolate at Save-On Foods! A vegan/70% dark chocolate if you’re looking for that dark & dairy free!

  • Can of coconut milk - put in the fridge instead of the cupboard when you’re home! This is key in ensuring the chocolate dip turns out extra creamy! It is my favourite part of this recipe!

  • Wax Paper & a cookie sheet etc to plate!

    BONUS : Coconut whipped cream if you’re feeling fun like me! I have found this exact brand at Save-On Foods & Superstore! It is a little more expensive than making it homemade but as a treat, I am not going to lie, I just love the aerosol can and how fun it is ;)

FIRST THINGS FIRST

I want to start by ensuring my coconut milk is in the fridge at least overnight before I do this and if possible I will freeze my frozen fruit once I have chopped it up. I personally like to put the fruit into the freezer for at least a couple hours if I have time to chop it up early so that it is nicer to dip! The bananas specifically are MUCH easier if you have them frozen. The heat from the chocolate will make the banana and pineapple a little mushy sometimes if not! If it is just for fun the strawberries work great without freezing at all so awesome for last minute!

Wash & chop up all the fruit you desire! Get creative and have fun!

Adding in the cannabis is fun for date night of before bed as a late night treat! Indica is great for a more relaxed feeling and sativa would be more of a hyper-active feeling so be aware of that as you indulge!

Must be of legal age to consume cannabis products.

THEN THE FUN PART

Mixing & heating the chocolate! Start with about a cup of hot water in a pot you can place another bowl over to heat the chocolate in! I used a glass bowl and a smaller pot. I then broke up the chocolate into the bowl!

2 Lindt 70% Dark Chocolate Bar

1 Lindt 70% Dark Chocolate Bar & 1 Cannabis Infused Chocolate Bar

Take the coconut milk from the fridge! You will notice a thicker section of coconut cream on the top. I use a spoon or scoop to slowly add it into the melting chocolate. You want it just thick enough you have no chunks and it is not liquid. The coconut cream adds such a nice texture it makes it so easy to coat the fruit!

ALMOST DONE!

Dip fruit into the chocolate! I like to use a spoon and slowly twist the fruit to ensure a nice coating!! I gently lay the fruit onto the wax paper so they don’t stick to the pan/plate!

Freeze for 30 minutes and transfer to the fridge for any longer and you are ready to eat! I love topping mine with the coconut whipped cream!

I LOVE having these on hand for late night snack or even when friends come over and are trying to stay on track! They are so simple and easy to make that its easy to pick up the ingredients or have them on hand!
